I found myself in a bit of a pinch the other day. My lovely daughter decided to invite several of her friends over. It was an impromptu gathering inspired by a snow-induced reprieve from school. My daughter and her friends were excited. I was a bit frazzled.
Don’t get me wrong, I love impromptu gatherings. And I love that our house is a focal point for those gatherings. The problem was, I had nothing good to eat. And having good things to eat is one of the things I live for!
I searched through my cupboards and found a box of Ritz crackers, chocolate chips and sprinkles. I put on my MacGyver problem-solving hat and thought about it. Too bad I didn’t have a paper clip, but I guess I’d just have to make do. And here’s what I came up with, Easy Chocolate Crackers. It’s sweet, chocolate and colorful. It had to be a hit!

Well, I know it’s not the healthiest or most glamorous dish in the world, but this was a group of 14 and 15-year olds. They weren’t too picky.

Warren Buffet once said, “There seems to be some perverse human characteristic that likes to make easy things difficult.” And sometimes I think it’s important to understand how easy and accessible being a vegan can be.
It’s true that some vegan dishes are time consuming. But some are as easy as pie. No, wait a minute. Pie is not so easy now that I think about it. It’s as easy as spreading a little melted chocolate on a cracker and adding a touch of sprinkles. And then listening to the happy cheers of teenagers as they prepare to consume them!

Easy Chocolate Crackers
Ingredients:
- 24 – 30 Crackers (I used Ritz crackers, but you can pick your favorite here…as long as they’re not infused with garlic or anything)
- 1 cup dairy free chocolate chips (Ghiradelli’s makes a wonderful dark chocolate dairy free version we love)
- Sprinkles, Nuts, Coconut, or whatever topping comes to mind.
Directions:
Use your favorite method to melt the chocolate chips. I put mine in a small saucepan and warmed them slowly over low heat until melted. Use a butter knife to swirl about a teaspoon of melted chocolate on top of each cracker. Immediately top with sprinkles, coconut flakes, chopped nuts or whatever your favorite topping may be. Be sure to do this while the chocolate is still soft. Place the Chocolate Crackers on a tray and put in the fridge for 15 – 20 minutes to allow the chocolate to harden. See? I told you this was easy!
These look really cute! I love the rainbow sprinkles. They remind me of the candy I make at Christmas with chocolate chips & saltine crackers.

I love these! Sometimes I use chocolate frosting, 2 Ritz crackers, and marshmallow creme if I had a craving for something really sweet…saves making a whole pan of brownies!!

When I have a sweet tooth but don’t feel like baking, I melt chocolate and peanut butter and spread on a ritz. =) Glad I’m not the only one.
