Mountains are Mysterious

I wish I were a Mountain. Mysterious. Rugged. Mountains are beautiful, but not because they're trying to be. They just are. Mountains don't read self-help books to be happier or more agreeable. As a result, people write books about them. Take their picture. Exalt them in poetry.

I would like to have a Mountain for a friend, to understand them more; to learn from the wisdom they've acquired through the years. Here's my story about my mysterious mountainous friend, Helena.

My family has started a new tradition, thanks to this series, America's Top 10 New Sandwiches...Veganized! Each Saturday night we're making the sandwich from Friday's post. It's turning out some very fun Saturday night dinners at our house!

Now I'm counting down the minutes for Saturday afternoon to arrive so I can make Sandwich #8, The Vegan Crispy Drunken Chicken Sandwich!

Do you ever have one of those days where nothing seems like it works? For me that sometimes leads to throwing my own personal pity party.

On those days, what I want is chocolate. And to be left completely alone!

But I'm learning that what I want and what I need are entirely different.

Here are my tricks to surviving those bad days.

Vegan Cream-Filled Cupcakes

Vegan Cream-filled cupcakes are great any time of year but these pink cupcakes are offered as a Valentine's Day celebration!

I have another new year's resolution to add to the list. Dessert first!

Erma Bombeck provided the clarion call when she said, "Seize the moment. Remember all those women on the Titanic who waved off the dessert cart!"
