I've teamed up with several passionate bloggers to create gluten-free goodies similar to items you might find on a Panera Bread Bar menu. The thing is, we have a dream that someday we might be able to walk in to our favorite cafe and order a gluten-free bagel or muffin or scone. Or maybe even this Gluten-Free Caramel Pecan Roll. This week we celebrated Summer Solstice, the “longest” day of the year. Or the shortest night. Either way, it means lots of fun in the sun.

The timing couldn’t be better because today’s name interview fits in perfectly with this theme. I met Sommer Collier recently and couldn’t resist the opportunity to talk to her about her name. Not only is it a unique name, but it also boasts an unusual spelling. Pronounced like the sunny season we’re in, Sommer is a name that imbues passion both in the sound and its intrinsic meaning.

This recipe of Orange Poppyseed Muffins is topped with a glaze I made by combining powdered sugar and orange juice - a tasty twosome if I do say so myself. My muse for this treat was an orange in the fridge that was on it's last leg. All I can say now, is thank goodness for "day-old" oranges. In the meantime, I've also concluded that the orange glaze would taste mighty fine on my Tropical Muffins.

Most everything in life requires work if you want to be good at it. But every now and then you find a sweet spot; something that comes easy. You know, like badminton. Or maybe this recipe for Instant Sangria. It's not an exact replacement for allowing the flavors of wine and fresh fruit to marinade overnight, but it's a really close substitute.

Although forethought may not be my strong suit, inventiveness is.

One night I was fixing dinner and thinking to myself, wouldn’t it be nice to be sipping some of that sangria right now? And that’s when the idea hit me. I combined a few of my favorite ingredients and voila! Instant Sangria!

I had so much fun making Frozen Banana Bites (inspired by my lovely mother-in-law, Diane) and because I live by the motto, "more is better" I decided to try this concept of freezing chocolate around chunks of fruit. We need to get our fruit in each day, right? A bit of fruit covered in dark chocolate and frozen so there's a crisp crunch when you bite into it. It's so fulfilling, you'll find yourself satisfied with just one. Well, make that two because you know what I say? More is better!
