Oatmeal Raisin Cookies

The subject of today's combination of ingredients is the time-tested Oatmeal Raisin Cookie. It's a recipe that's been around forever, so what's the point of publishing yet another recipe? Well, even old dogs can learn a new trick now and then; this recipe is not only vegan, it includes an interesting, "new" ingredient, Chia Seeds. Yes, I'm talking about the same seeds that were sold as Chia Pets in the '90s. It's hard to imagine that seeds whose sprouts were used to create "hair" for terracotta figurines such as Homer Simpson and Scooby-Doo, would actually be healthy to eat. But I've learned how to incorporate Chia seeds in some of my vegan baked goods, resulting in addition of Omega-3s and other health benefits.

A little new combined with a little old. A little time in the kitchen combined with a little time for reflection. A little cookie combined with happy faces of friends and family. That's when you know it's been time well spent.

Vegan Twice Baked Potatoes

A hankering for potatoes recently combined with the not so gentle urging of my daughter resulted in a quest to make Twice Baked Potatoes. My quandary? How to make this traditionally creamy, cheesy dish vegan. I think I found a perfect solution using a healthy and delicious substitute...inspired by a trip to Argentina of all places. These Vegan Twice Baked Potatoes can be enjoyed as a side dish or as a meal itself with a salad on the side. Versatile and tasty!

Pumpkin Blondies

Don't you just hate it when you walk in the store in August and they're already hawkin' the Halloween candy? The heat is still melting the make-up off my face, how can I manage to think about bite-size pieces of chocolate to hand out to the neighbor kids dressed like Jack Sparrow?

Well, it appears I might be wreaking some Halloween havoc of my own with today's post. Pumpkin Blondies in August. How crazy is that? I decided to throw my immature sense of fashion, my limited knowledge of food faux pas, and my remaining bit of caution to the wind, and give it a go.

Homemade Oreo Cookies

I think I've been to nearly every store in the country. OK. Maybe I've missed a few (or a lot) of them. But just about every store I've been to has sold Oreo cookies. I kid you not. Convenience stores. Pharmacies. Grocery stores. Even hotel gift shops! They all sell Oreo cookies. So why, I ask, would you make something at home that you can so easily buy at nearly any store in the country?

The only answer that comes to mind is...for the fun of it! Think of it this way, with a batch of these little darlings at home, it's one less thing you'll have to run up to the store for this week.

Easy Vegan Vanilla Cake

After a much-needed vacation, I'm back with some vim and vigor...and yellow cake. How can one really have their fair share of "vim" without a little dose of vanilla cake? Vegan baking can oftentimes be a little tricky, but I think I've discovered a combination of ingredients that falls right on the mark.
