No-Bake Coconut Cookies

Coconut sits next to a batch of No-Bake Cookies.

These No-Bake Coconut Cookies are a perfect summertime snack because not wanting to fire up the oven on a hot day like today doesn't stop my sweet tooth from wanting a cookie. Of course, now that I think about it, there's not much of anything that stops my sweet tooth from wanting a cookie. Except possibly Novocain.

Sun Tea for One

Summer fresh sun tea made daily and served with lemon and mint

I've started this fun habit lately of making Sun Tea for myself. It's a simple ritual. A slight change in my day, and yet it brings profound differences in my life. Well, "profound" may be a stretch, but you get my point.

Brown Rice Banana Pie Breakfast

Brown Rice Banana Pie is perfect for breakfast or a mid-day snack.

I know I'm not kidding anyone here with this Brown Rice Banana Pie Breakfast recipe. It's not really a pie. You know how I know this? It's way too easy to be a pie. But scoot your chair over here. Closer...because I want to tell you a secret. This may not be a pie, but it's just as good. And better yet? You can eat this one for breakfast! Scandalous, I know!

Best Vegan Brownies

A chocolate brownie surrounded by flowers from my garden.

I'm on a mission to show that good vegan eats can include delicious and tasty foods like my new favorite, these Best Vegan Brownies. I call them "best" because, well, in my book that's exactly what they are. Dark Chocolate throughout and topped with Chocolate Frosting laced with chopped pecans. A recent study shows that including dark chocolate can be beneficial for your heart. That's good news for these brownies...and for those of us who get to eat them.

Ultra Light Cider

Pop the top on a bottle of ice-cold Michelob Ultra Light Cider

When you're gluten-free, sometimes it's the small things that make can make a difference, like a tiny little speck of a splinter bringing you to your knees. I'm not a big drinker, but now that I'm gluten-free it seems like every variety of alcohol is based from wheat. I was beginning to wonder if my limited alcohol consumption would be the occasional glass of wine. Thanks to Michelob ULTRA Light Cider, I can enjoy a tall, cool one on the deck with my friends. It has a flavor that can only be described as crisp apple. Sure, it says that right on the package, but I honestly can't think of better way to describe its flavor.
