These No-Bake Coconut Cookies are a perfect summertime snack because not wanting to fire up the oven on a hot day like today doesn’t stop my sweet tooth from wanting a cookie. Of course, now that I think about it, there’s not much of anything that stops my sweet tooth from wanting a cookie. Except possibly Novocain.
This is the time of year I begin to feel like a vampire. It’s kind of handy that vampires are “in” right now. It makes me feel tres chic!
When it gets hot like this we start reserving our outdoor activities for early morning or late evening. That means tennis by the light of the moon. Hmm, sounds a little more werewolvish now that I think about it.
Of course as romantic as it might sound to play tennis by moonlight, it’s not really very practical. You need to be able to see the ball.
Who knows, maybe someday they’ll create glow-in-the-dark tennis balls. But for now we play at courts that have lights. We’ve also found some courts that have tall trees to the east that provide some nice morning shade. The trick is beating everyone else, which sometimes means getting up fairly early.
All that tennis is great exercise. And you know what exercise is?
That’s right. A great excuse to eat cookies!
That’s the way I look at it. I’ve actually created a rather complicated formula that boils down to this:
Calories burned = opportunity to eat more cookies.
No, no, no. I know that’s not the way it should be. I should work hard on and off the courts and fit into my capri’s a little more comfortably.
But all working out and no cookies can make Marly a dull girl.
That’s what makes these cookies so perfect. This No-Bake Cookie recipe has oatmeal and coconut and peanut butter. Those are all healthy things to eat. And I reduced the sugar to make them just slightly sweet, but not too much. And best yet? This recipe only makes two dozen cookies.
Because I can be good, but only in short distances. Four dozen cookies requires willpower over a longer period of time. That’s too much.
One dozen cookies is hardly worth the effort to make. But two dozen? Well, that’s what I call just right.
So I can have a cookie. Maybe two. And head out to the courts and burn it all off (and hopefully then some).
No-Bake Coconut Cookies
Ingredients
- 1 cup sugar
- ½ cup margarine
- 4 tablespoons cocoa
- ½ cup soymilk
- 1 cup peanut butter
- 1 teaspoon coconut flavoring (or vanilla if you don’t have that handy)
- 3 cups oatmeal
- ½ cup coconut flakes
Directions
Place sugar and margarine in a saucepan and bring to a boil. Allow this to boil for 30 – 45 seconds. Remove from heat and add cocoa, soy milk, peanut butter, and vanilla. Stir well until everything is well combined.
Add the oatmeal and shredded coconut and stir again. Set aside to cool for just a minute.
Lay out a sheet of waxed paper and use a cookie dough dispenser or large spoon to drop the still warm dough on the waxed paper. Allow them to sit until thoroughly cooled.
Yields about 2 dozen cookies.

I made these today and used half almond butter, half peanut butter, and also added sliced almonds to the dough. They are almost like an Almond Joy bar! Thanks for this recipe!
