We are kindred black-beans-in-our-brownies kind of spirits. Hmm, I don&#039;t know what that says about us. Anyway, I like to add corn starch to most of my vegan baked goods for a couple of reasons. First, I think it helps step in the role that eggs serve in other recipes...as a binding agent to hold things together. (I could use a little holding together in life in general...). Second, I think the cornstarch can help lighten up the heaviness or denseness of the recipe. Cornstarch is the ingredient in cake flour that is added for that purpose. I hope this helps. The use of a dehydrator with low temperatures is a method generally used in Raw food &quot;cooking&quot;. This is to preserve the natural enzymes and nutrition in the food. Vegan cooking is not necessarily Raw &quot;cooking&quot;. For the most part though most Raw food diets tend to be Vegan. But of course there are exceptions to that as well.  

It is kind of like the phrase &quot;A square is always a rectangle, but a rectangle is not always a square.&quot;]]></description>
