These Dark Chocolate Sandwich Cookies may possibly be the best vegan cookies ever! Do you think I’m being overly dramatic? It’s possible, but you would be too if you were eating these cookies…like I am! OK. I’ll put the cookies aside so I can finish the recipe. The things I do for you!

Redefining vegan with these dark chocolate sandwich cookies

These cookies were love at first sight. I think it’s because I’ve been on overdrive on my New Year’s resolutions. I’m cramming in the Spanish, the workouts, the meditation, the novels, and anything else I can think of. And I’m not regretting any of it, I’m just taking a mini-break from one thing.

And this little break has been enlightening. I’ve found the perfect solution to hunger. It’s called food. It’s a crazy thing, I know, but when you eat, you’re not hungry anymore.

I think that growling feeling in my stomach is screaming at me for a reason. We need to listen to our inner selves right? Well, my inner self is telling me, diet-be-damned, to┬ástop whatever I’m doing (or not doing) and head to the kitchen to have a cookie.

Honestly, I don’t think eating has to be the enemy of a diet. Really, the thing that’s hard is when food tastes good, is the stopping part. You want to eat just one more, followed by one more, and so on. Until the only thing left in front of you are crumbs, the remnants of your forbidden fruit…while your skinny jeans gently weeps.

I know this isn’t going to sound right, so stay with me. But that’s not the case with these cookies.

That sounded completely bad, didn’t it? I just said it’s easy to STOP eating these cookies. I am going to have to have a chat with my PR Director. Wait a minute, I think that’s me! Well, we’re going to have to work on our messaging.

Me: No, not massage! Message!
Siri: Sorry, I don’t show any listings for Message.
Me: (throwing phone on the floor) Oh forget about it! (Don’t worry, I have a plush carpet in my office…Siri is fine).

Me: (rolling my eyes)

What I’m trying to say here is that these are perfect cookies because they’re rich. Decadent. Somehow eating just one is fulfilling. I didn’t say “filling” there, you Siri wannabe’s. The distinction is important. I’m not saying I can eat one of these cookies and walk away feeling stuffed. But I do walk away feeling content. And that means a lot on a day when my “to do” list is exponentially higher than my “done” list.

We’re all looking for a little contentedness. Sometimes all it takes is a cookie.

 

Dark Chocolate Sandwich Cookies

Ingredients

  • 1/2 cup dairy-free margarine, sliced
  • 1/2 cup powdered sugar
  • 2 tablespoons ground flax seed
  • 4 tablespoons soy milk
  • 1 cup flour
  • 1/4 cup corn starch
  • 2 tablespoons cocoa powder
  • Creamy Chocolate Ganache (see recipe below)

Directions

  1. Heat your oven to 350F and line a cookie sheet with parchment paper.
  2. Combine the sliced dairy-free margarine, powdered sugar, ground flax seed and soy milk into the bowl of a food processor. Pulse for several seconds until everything is well-combined. Scrape the sides of the bowl, and pulse again for several seconds (20 – 30) until the mixture is light and creamy.
  3. Move the chocolate mixture to one side of the bowl. On the other side add the flour, corn starch, and cocoa. Use a spoon to stir these ingredients together a little. When you’re ready, pulse all the ingredients together until well combined.
  4. Place the food processor bowl (with lid on) in the fridge to chill out for at least 30 minutes, preferably an hour.
  5. While you’re waiting, prepare your chocolate ganache (see recipe below).
  6. When the dough has firmed up, use a teaspoon to measure out balls of the dough. Roll them between your hands to firm up the ball and place on the prepared cookie sheet. Use the flat side of a glass to flatten the balls. I dipped my glass in sugar before pressing down the cookies. I liked the way the raw sugar looked on the chocolate cookies, but that is optional.
  7. Bake for 7 – 8 minutes until the cookies are firm. I like them to be crispy on the outside but soft on the inside.
  8. Remove the cookies from the oven, place them on a cooling rack and allow them to cool completely before frosting.
  9. When the cookies are completely cooled, place a large dollop of chocolate ganache on the flat side of one cookie and top that with the flat side of another cookie. Voila! Cookie Sandwich! Repeat until all the cookies are done.

 

Creamy Chocolate Ganache

Ingredients

  • 1/2 cup dairy free chocolate chips
  • 2 tablespoons Hazelnut flavored Kahlua (or any of your favorite chocolate or coffee liquor)
  • 4 tablespoons dairy-free cream cheese

Directions

  1. Place the chocolate chips and 1 tablespoon of the Kahlua in a microwave-safe bowl. Microwave for 11 seconds (That only sounds precise…but it’s really just a time-saver. It’s easier to hit the “1″ button twice).
  2. Remove from the microwave and stir. You’ll notice the chocolate is quite a bit softer now, but you might still need to warm it up a little more. If so, place the bowl back in the microwave and heat for 8 seconds.
  3. Add the second tablespoon of Kahlua and the dairy-free cream cheese and stir until you’ve reached a nice, smooth consistency.

  3. Yummy! As a confessed chocaholic I must say they look delish!..and the fact that they are rich and fulfilling makes them even more irresistible! They do look like the best vegan cookies one can ever taste!
    ..and now my chocolate craving, at 12.34pm, is endlessly big! Blame it on your fabulous cookies! :-p
