Weekend Review: Friendship

Is there anything like friendship? They say we don’t get to choose our family, but we do get to choose our friends. I think that makes friendship even more special. We’ve spent some good times with friends lately and that usually means food is involved. We had our friend Bob come spend the day with us when his wife was out of town and he was home recovering from foot surgery. Is there anything more therapeutic to a wounded spirit (or foot) than good food and good friends? I don’t think so. And I love cooking on the weekends so I thought I’d share with you some of my favorite Easy Vegan Weekend Meals.

Let’s begin with Friday night. It was just me and Shawn so we had a little of my favoriteĀ Sesame Tofu. This is one of my simple but delicious weekend dishes because it’s so flavorful and easy to put together.

Sesame Tofu with Peppers and Mushrooms

Shawn steamed a little broccoli and carrots to go on the side and chowed down to Bill Maher’s Real Time to give it a real weekend feel.

No one in my family seems to like mushrooms or peppers. You know what I say to that? More for me! The only thing required to make the meal perfect was my nearly empty bottle of Sriracha. Life is good.

Bob joined us on Saturday afternoon and that’s when I preparedĀ Friday Night Garlic Pasta.

I always love changing a recipe here and there, but this one has settled into a favorite rhythm. It’s such an easy dish to throw together and it certainly has lots of wow factor. Bob is not a vegetarian by any stretch of the imagination, let alone vegan, so I thought this would be a great way to appeal to the kinds of meals he’s used to. He went back for seconds…or let me say, he asked for seconds. He wasn’t really able to get more for himself.

Michael Pollen says to limit sweets to the days that begin with the letter S. That’s why my weekends are not complete without making a dessert. I didn’t want to spend all night in the kitchen and miss out on the entertaining discussions with Bob so I decided to put together this quick and tasty Chunky Monkey Cake. It’s a go-to favorite and a real show stopper when serving guests.

I didn’t ask him this directly but I can tell from his comments that Bob used to think vegans were crunchy kinds of people who lived on nuts and twigs. But not any more. Now that he knows us, and has had the chance to dine with us a few times, he knows better. “I think I could be vegan if I could eat like this.” I’ve heard that more than a few times from friends who’ve had dinner with us.

Those words are like music to my ears. Because I like my friends…and I want them to live healthy, long lives.

  2. I love shattering people’s understanding of vegan food! My dad is especially hilarious, he always does a double take like, “no way, THAT’S vegan??” The food looks delicious, I would be thrilled with that meal if I was an omnivore.
