Did you know that today is more than a government shutdown and the first day of Obamacare? It’s also more than the beginning of Halloween Season and…please let it be more than the beginning holiday shopping. I don’t do well in the shopping department. If you were in a mall recently and saw some crazy woman running for the nearest exit yelling, “Get out while you still can”, well, that would have been me. Politics and Seasonal Shopping Disorder aside, October is also National Vegetarian Awareness Month.
I love sharing how vegetarian and vegan diets don’t consist entirely of nuts and twigs. I live in the midwest and even today there are a lot of misconceptions about what exactly vegetarians and vegans actually eat. So, to celebrate the month, here’s a highlight of some of my favorite veggie-based recipes.
Choco-Cherry Cupcakes – almost too good to eat. Did I just say that?
This recipe could seriously be one of my best sandwiches…ever: Avocado and Jalapeño Grilled Vegan Cheese Sandwich
My Vegan Deep-Dish Pepperoni Pizza was featured by the Humane Society in their national weekly newsletter, but you can also get the vegan pizza recipe here too.
I love a savory start to my day and these Gluten-free Vegan Sweet Potato Biscuit Sandwiches gets me going every time!
We are approaching what I consider to be one of my favorite times of year. I like to call it Pie Season. Check out this Chocolate Brownie Peanut Butter Cheesecake Pie and you’ll see why I think being vegan is better than sliced bread. I mean, who wants to eat sliced bread anyway?
Let the eating begin!
