Vegan Twice Baked Potatoes

A hankering for potatoes recently combined with the not so gentle urging of my daughter resulted in a quest to make Twice Baked Potatoes. My quandary? How to make this traditionally creamy, cheesy dish vegan. I think I found a perfect solution using a healthy and delicious substitute...inspired by a trip to Argentina of all places. Pumpkin Blondies

Don't you just hate it when you walk in the store in August and they're already hawkin' the Halloween candy? The heat is still melting the make-up off my face, how can I manage to think about bite-size pieces of chocolate to hand out to the neighbor kids dressed like Jack Sparrow?

Well, it appears I might be wreaking some Halloween havoc of my own with today's post. Pumpkin Blondies in August. How crazy is that? I decided to throw my immature sense of fashion, my limited knowledge of food faux pas, and my remaining bit of caution to the wind, and give it a go.

Homemade Oreo Cookies

I think I've been to nearly every store in the country. OK. Maybe I've missed a few (or a lot) of them. But just about every store I've been to has sold Oreo cookies. I kid you not. Convenience stores. Pharmacies. Grocery stores. Even hotel gift shops! They all sell Oreo cookies. So why, I ask, would you make something at home that you can so easily buy at nearly any store in the country?

The only answer that comes to mind is...for the fun of it! Think of it this way, with a batch of these little darlings at home, it's one less thing you'll have to run up to the store for this week.

Orange Poppyseed Muffins

This recipe of Orange Poppyseed Muffins is topped with a glaze I made by combining powdered sugar and orange juice - a tasty twosome if I do say so myself. My muse for this treat was an orange in the fridge that was on it's last leg. All I can say now, is thank goodness for "day-old" oranges. In the meantime, I've also concluded that the orange glaze would taste mighty fine on my Tropical Muffins.

Instant Sangria

Most everything in life requires work if you want to be good at it. But every now and then you find a sweet spot; something that comes easy. You know, like badminton. Or maybe this recipe for Instant Sangria. It's not an exact replacement for allowing the flavors of wine and fresh fruit to marinade overnight, but it's a really close substitute.

A Berry Good Smoothie Day

I recently woke to a flat of strawberries at my door. What a great surprise! After exclamations of joy I was immediately struck with a question. What would I do with all these strawberries?

I didn't know the answer to that on a macro level, but I knew immediately what I wanted to do with a few of those berries that day. Strawberry Smoothies and martini glasses came to mind. Is that a country music song? Either way, something tells me it's going to be a "berry" good day!
