Today’s recipe, Sandwich No. 1, is allowing us to end this series with a bang! Endless Simmer said it best when describing this sandwich in the original post, “It takes some chutzpa to reinvent what...has already called the best drunk food in America.” And there was definitely a little chutzpa in veganizing it as well. Soulful singer Luther Vandross allegedly created the original sandwich and spirited Ashley McLaughlin of NeverHomemaker was more than happy to veganize it. A pecan-topped, maple-encrusted donut bun is cut in half and filled with a chickpea burger and wedges of smoked applewood "bacon."

The Lasagna Bolognese Sandwich is Sandwich No. 3. Riddled with thin layers of marinated, lightly breaded and fried pasta, this sandwich soon became a new target for our Vegan team. It was a challenge to veganize this sandwich which boasted "a doughy roll joined by sweet peppers, smoked mozzarella and sharp provolone." Lucky for us, one member of our team was up for the task. This is the sandwich I've been waiting for, the Pibil Torta. I somehow could not sleep at night until there was a vegan replacement for this sandwich. Ever since I read about the Huffington Post article which claimed stake on America's Top 10 New Sandwiches, I have found myself stopping at odd moments of the day feeling baffled at the the thought of sandwich #6.
