A delicious way to eat your fiber includes Orange Ginger Bran Muffins

Getting enough fiber in your diet may be more important than we once realized. But fiber and flavor seem to be on opposite sides of the spectrum. Somehow the two come together quite nicely with these high-fiber, high-flavor bran muffins. Delicate hints of ginger and bursts of orange zest combine to make each bite a reason to look forward to the next.

Henry Ward Beecher once said that we ought to carry ourselves in the world, "as an orange tree would if it could walk up and down in the garden, swinging perfume from every little censer it holds up to the air."

Be the tree! With that in mind I decided to make muffins bursting with the flavor of oranges. These Tropical Muffins are a lightly sweetened combination of orange, banana, and strawberry with an almond meal and orange zest topping.
