National Vegetarian Awareness Month

There's a lot of things to celebrate this time of year - Halloween is around the corner, Thanksgiving, the Holidays are coming. But it's also the first day of National Vegetarian Awareness month. That makes me pleased as punch. Happy as a pig in peach orchard! I'm happy as a clam...around a bunch of vegetarians! I'm celebrating by sharing a few of my favorite veggie recipes.

Vegan Hotdog Buns

A simple trip to the store to buy hotdog buns for a throwback meal made vegan resulted in a surprise finding - there aren't a lot of options for store-bought dairy-free hotdog buns. At least not that we could find. My hankering for vegan hotdogs was not to be denied so I made my own homemade Vegan Hotdog Buns.

Pan Seared Bananas and Chocolate Vegan Grilled Cheese Sandwich

August means school will be starting soon and whether you're at the end of your rope or you're sad to see the little ones graduate to the next grade, this time of year can oftentimes lead to some level of anxiety. My favorite cure is chocolate (for just about anything that ails you) and this is my most recent (and favorite) prescription: Pan-Seared Bananas and Chocolate Vegan Grilled Cheese Sandwich. It's a mouthful...in more ways than one!

Avocado and Jalapeño Grilled Cheese Sandwich

You may not have all the ingredients on-hand, but once you do, you can delight in the simple steps to make this delicious vegan sandwich over and over again. Tender slices of peppered Tofurkey with avocado and melted Daiya Havarti Garlic Jalapeño cheese. To top it off I used thick cut slices of artisan rosemary herbed bread.

Lentil Sloppy Joes

A naturally sweet, smoky, and spicy tomato sauce is the star of these easy-to-make Lentil Sloppy Joes. What I love is that this recipe is a trifecta of triumph for vegan dishes. That's because it's tasty, healthy, and cheapy. I just made up that last word, but it needed to fit with the theme while getting the message across...this recipe is not too tough on the wallet.
